GAcoaster
Christmas Town is the most Christmas-y thing you can do. It's really a traditional Christmas with great shows, great food and a few rides and millions of lights. They do an express pass that is well worth it if it's crowded so you get reserved seating at the shows, a front of the line for all the major rides open and an front of the line pass for seeing Santa. It was well worth it because the lines get HUGE. Check out my pictures from last year's Christmas Town: Christmas Town 2010 Colonial Williamsburg is awesome at Christmas too. GAcoaster
It will really depend on the weather. If it's dry (and relatively warm) there will be big crowds no matter when you go. We were just at the park today and they already have a lot of the lights in place and the cables in place for the rest. The first year they had 2 million lights, last year they had 4 million lights, this year they're supposed to have 5 million lights! The trees in the San Marco area are filled with lights already (though not turned on yet). This year Griffon will not be running but Alpengeist will (on days its over 45 degrees). Dark Kastle will also be closed for rehab this year.
