It was mentioned on Screamscape today that Busch Gardens in Williamsburg has introduced a whole series of offers including a coaster tour, train tour, and some animal tours. The Disney parks have been doing this for years and they have been very popular (and profitable). Theirs include simple themed tours like their gardens and trains, but also offer in-depth behind the scenes tours ranging from their under ground utilidors in the Magic Kingdom's to a backstage tour of EPCOT's pavilions. Great Adventure does offer a VIP Safari tour which takes you to the barns and allows you to interact with the animals in special ways. However, there really aren't any real "behind the scenes" or specialized theme park tours. What would you consider an ideal Great Adventure theme park tour?
